• 2 medium zucchini
• 2 tbsp olive oil
• 1 yellow onion, sliced
• 1/4 cup(s) parmesan cheese, shredded
1. Remove ends and cut the zucchini in half lengthwise. Cut into 1/2 inch thick slices.
2. Heat olive oil in a large skillet and saute onions for 10 minutes on med-low heat (until they start to brown).
3. Add the zucchini and season with some kosher salt and pepper. Toss occasionally for 10 - 15 minutes or until cooked through. Sprinkle with parm and cook for 30 seconds more.
