Szechwan Pork Lettuce Wraps

We have lots of fans of our chicken lettuce wraps so we thought we'd try out a pork version. Our families are glad we did - they loved it!

• 1 1/2 lb pork tenderloin
• 2 tsp vegetable oil
• 2 tsp ginger root, minced
• 2 tbsp rice vinegar
• 2 tbsp teriyaki sauce, low sodium
• 2 tbsp soy sauce, low sodium
• 2 tbsp honey
• 1 tbsp chili sauce, low sod.
• 2 tsp flour
• 1 1/2 cup(s) carrots, julienne-cut
• 1/4 cup(s) green onion(s), thinly sliced
• 1/2 cup(s) peanuts, unsalted and dry roasted
• 1 head bibb lettuce

1. Cut pork in 1/2 inch pieces and saute in oil with ginger for 2 minutes.
2. Whisk vinegar and next 5 ingredients in small bowl. Add vinegar mixture, carrots, and green onions to pork and cook 3 minutes until it thickens slightly, stirring often. Add peanuts.
3. Spoon mixture onto lettuce leaves; roll up.

Note: Bibb lettuce is the best for lettuce wraps but it's hard to find. Use iceberg as a backup or serve over rice instead.
Suggested Side:  tossed salad with ginger dressing

We had this for dinner tonight and it was fabulous. I made the pork earlier, so it was ready to go when it was time to prepare dinner. I used a sriracha sauce, which is a little bit hotter, and then served a coconut milk jasmine rice ... the perfect cool to the spicy pork. Loved it - thank you!
