DIRECTIONS

• 1/4 cup(s) red pepper jelly
• 2 tbsp cider vinegar
• 1 tbsp olive oil
• 8 cup(s) spinach
• 1/4 cup(s) gorgonzola cheese
• 1/2 cup(s) pistachio(s)

1. Make dressing by combining red pepper jelly, cider vinegar and olive oil in food processor. Season with salt and pepper.

2. Toss together and serve.

Note: Blue cheese is a great substitution for gorgonzola.
