Shrimp Burgers

If you are a shrimp fan, you have to try these burgers. If you are short on time, you can buy pre-cooked shrimp at your local seafood market.

• 1 lb shrimp
• 2 tbsp green onion(s), chopped
• 3 tbsp celery, diced
• 2 tbsp parsley (fresh), chopped
• 1 1/2 tsp lemon zest
• 3 tbsp mayonnaise, light
• 1 cup(s) cornbread stuffing, crushed
• 1 egg(s), beaten lightly
• 4 tbsp peanut oil
• 1/2 tsp tabasco sauce
• 6 hamburger buns
• 6 slice(s) beefsteak tomato
• 6 leaves green leaf lettuce
• 6 tsp tartar sauce

1. Boil shrimp for 2 minutes. Drain and place ice on top to cool. Peel and devein shrimp and chop into small dice.
2. In large bowl, mix diced shrimp with green onion, celery, parsley and 1 1/2 tsp. lemon zest. Stir in mayo, egg, and cornbread crumbs and beat with a whisk or wooden spoon. Season with salt, pepper and tabasco sauce.
3. Heat peanut oil in large skillet or grill pan over medium heat. With your hands, form 6 patties about 3 inches in diameter. Saute patties, 3 at a time, until both sides are nicely browned. Drain on paper towels.
4. Serve on buns with lettuce, tomato, and tartar sauce.
