Ritzy Cracker Chicken

Kids love this quick and tasty chicken.
 

INGREDIENTS

DIRECTIONS

• 4 chicken breast halves, boneless skinless
• 2 cup(s) Italian dressing, light
• 1 cup(s) parmesan cheese, grated
• 1 1/4 cup(s) ritz crackers, crushed

1. Pound chicken breasts and marinate for 3 - 4 hours in Italian dressing.
2. Remove chicken from dressing and shake in ziplock bag with crushed crackers and parmesan cheese.
3. Place coated chicken in baking dish coated with cooking spray.
4. Cook at 350 degrees for 20 - 30 minutes. Broil to brown on top.
Option: Cut chicken into tenders before marinating.

Note: Cook the chicken on a baking rack in your baking dish to keep it crispy on all sides.

I have made this before except I use Light Ranch Dressing and I don't marinade it. I chop up the chicken breasts into strips and cook at 350 degrees for 35-45 minutes. It's so flavorful between the Ritz crackers and the Ranch dressing.

LOVE IT! The entire family loved it!! I got a "good job Mom!" from my 4 1/2 year old daughter and our 18 month old kept saying "More!! More!!". We served it with baked ranch new potatoes and steamed broccili.

I find that marinading for 3+ hours breaks down the chicken too much. 1 hour was plenty especially because you've pounded the chicken, it is soakes in the marinade easily. Otherwise big hit mostly because they get to smash the crackers.
