• 1 english cucumber, diced • 1 red bell pepper, diced • 7 oz sun-dried tomatoes, oil packed, drained • 4 oz feta cheese, crumbled • 1/2 cup(s) kalamata olives, pitted, chopped • 2 tbsp olive oil • 2 tsp oregano • 60 filo dough mini-cups (frozen), thawed
|  | 1. Dice cucumber (with skin on), red bell pepper, sun dried tomatoes, olives and feta.
2. Add 2 tbsp of olive oil and about 1 tbsp of oregano. Toss.
3. Scoop mixture into phyllo cups. Serve. |
