Meatloaf Muffins

This is a fun and delicious spin on meatloaf that your kids will love to help make and eat!
 

INGREDIENTS

DIRECTIONS

• 1/4 cup(s) brown sugar
• 1/4 cup(s) yellow mustard
• 1/4 cup(s) ketchup, low sod.
• 3 slice(s) white bread, torn
• 3/4 cup(s) milk
• 2 medium egg(s), beaten lightly
• 2 lb ground beef
• 1/2 cup(s) yellow onion, finely chopped
• 2 tbsp Worcestershire sauce
• 1 tbsp garlic, minced

1. Preheat oven to 400 degrees. Combine brown sugar, mustard, and ketchup and set aside. (This is your topping sauce.)
2. Combine bread, milk and eggs in a large bowl and mash it.
3. Add remaining ingredients and mix until blended. Season with salt and pepper. Spoon mixture into muffin tin lightly coated with cooking spray(approx 1/2 cup portions).
4. Spoon 1 teaspoon of topping mixture on top of each meatloaf muffin.
5. Cook 25-30 minutes or until done.

We tried these tonight along with glazed baby carrots and mashed potatos. I have some picky eaters to feed and we all LOVED these. Thank you for the recipe!

I haven't tried this recipe, but I have used a similar one - "frosted" with dyed mashed potatoes and served on April Fool's day as dessert for dinner.
