Lasagna Soup

Make this fabulous soup on a chilly Sunday afternoon or on a Friday night for a casual supper with friends. You can use chicken, turkey or regular Italian sausage.

• 1 tbsp olive oil
• 12 oz turkey sausage, Italian-style
• 1 yellow onion, chopped
• 1 cup(s) carrots, diced
• 8 oz mushrooms
• 1 tbsp garlic, minced
• 32 oz chicken broth, low sodium
• 14 1/2 oz stewed Italian-style tomatoes, chopped
• 1 cup(s) campanelle pasta, dry, uncooked
• 1 cup(s) mozzarella cheese, part skim, diced
• 2 oz parmesan cheese, shaved
• 1/4 cup(s) basil (fresh), thinly sliced

1. Cut sausage into thin circles. Brown in a little olive oil over medium-high heat. Add onion and carrot and saute for 3 - 5 minutes. Add mushrooms and garlic and saute for a 3 - 5 more minutes.
2. Add broth and tomatoes (with juices). Bring to a boil.
3. Stir in pasta and simmer until cooked (about 10 minutes).
4. Place cubes of fresh mozzarella in each serving bowl. Ladle soup over the cheese and let it sit briefly to melt. Garnish with fresh parmesan and basil.

I just made a version of this w/yesterday's leftover pasta & peppers but we left out the mushrooms & ricotta and used a little cream cheese instead. All five of the kids liked it and so did I. Thanks for the idea! www.realnetta.blogspot.com

I made this last night for the fam; there are five of us, so I altered it a little. I added one more box of chicken stock, and one more can of tomatoes, also added a little more garlic. I used shredded mozzerella on top. It was fabulous! All of the kids loved it, and hubby had two bowls. Very easy to make too (I cheated by using shredded carrots that go in salads!)

Delicious! We used fire roasted diced tomatoes (Italian Style) instead of stewed. If you make enough for leftovers, add cooked pasta to each bowl instead so it doesn't soak up all the liquid overnight.

This soup is delicious! I used hot Italian sausage and enjoyed the spicy flavor.
