• 4 medium jalapeno pepper(s) • 4 tbsp cream cheese • 4 medium chicken breast halves, boneless skinless • 8 slice (1/2 inch thick) bacon
|  | 1. Preheat oven to 350 degrees.
2. Cut the top of off each jalapeno and stuff them with cream cheese.
3. Pound each chicken with a meat mallet. Season the chicken with salt and pepper.
4. Place the stuffed jalapeno on the chicken and roll it up. Next, wrap 2 pieces bacon around each piece of chicken and secure with toothpicks.
5. In an oven proof pan, brown the chicken for a few minutes on the stove over medium-high heat.
6. Once chicken is browned on all sides, place the pan with chicken in the oven for 30-40 minutes. |
