Fattoush Salad with Pita Chips

The citrusy vinaigrette makes makes this salad sing. I added grilled chicken to make it a meal, but we think it's great as a side salad too!

• 1/2 cup(s) olive oil
• 3 tbsp lemon juice (fresh)
• 4 round pita bread
• 2 cup(s) tomato(es), diced
• 2 cup(s) cucumber(s), diced
• 1/2 cup(s) red onion, finely chopped
• 1/2 cup(s) green onion(s), diced
• 2 tbsp mint (fresh), chopped
• 2 tbsp parsley (fresh), chopped
• 4 cup(s) romaine lettuce, loosely packed

1. Make dressing by blending olive oil and lemon juice. Season with salt and pepper.
2. Toast pita bread until crisp and break into 2" pieces.
3. Toss lettuce with a little vinaigrette and place on salad plate. Toss veggies, parsley, mint, and pita pieces with a little vinaigrette and place on top of romaine.

Note: You don't need to peel the cucs.
