Exotic Spinach Salad

Jessica makes this salad when entertaining casually, and guests always love the unique and unexpected flavor of curry in the dressing. This salad was even a hit with a group of restaurant critics she nervously cooked a meal for years ago.
 

INGREDIENTS

DIRECTIONS

• 1 bunch(es) red leaf lettuce
• 2 cup(s) spinach
• 1 can(s) mandarin oranges, 10 oz.
• 1 cup(s) red grapes, seeded and chopped
• 1/2 cup(s) almonds
• 1 medium avocado, sliced
• 1/2 cup(s) olive oil
• 1/3 cup(s) white vinegar
• 1 clove(s) garlic
• 2 tbsp brown sugar
• 2 tbsp chives
• 1 tbsp curry powder
• 1 tsp soy sauce, low sodium

1. Combine first 6 ingredients in a large salad bowl.

2. Combine oil, white wine vinegar, garlic, brown sugar, chives, curry powder, and soy sauce in a blender.

3. Pour dressing over salad before serving.

Note: Add sliced, grilled chicken to the salad for a complete meal! Dressing can be made ahead and refrigerated. Bring to room temperature before serving.

My hubby made this for my birthday and it was amazing!!! The difference in flavors really makes it unique! We really enjoyed it. We did double it though, just because we pigged out on it!!
