Denise's Italian Style Meatloaf

This meatloaf is unbelievable! The leftovers would make great sandwiches, if there ever were any!
 

INGREDIENTS

DIRECTIONS

• 1 lb meatloaf mixture (ground beef, pork, lamb)
• 1/2 small yellow onion, minced
• 1/4 cup(s) breadcrumbs
• 1/4 cup(s) parsley (fresh)
• 1 medium egg(s)
• 3 tbsp ketchup, low sod.
• 1 medium red bell pepper, sliced
• 1 medium yellow bell pepper, sliced
• 1 medium yellow onion, sliced
• 1 can(s) tomato sauce (canned)

1. Mix meat, onion, breadcrumbs, parsley, egg and ketchup in a medium bowl. Form into a loaf and place into rectangle pyrex dish.

2. To make sauce, saute peppers, onion over medium heat until tender. Add tomato sauce and season with salt and pepper.

3. Pour sauce over meatloaf and cook for 1 hour at 375 degrees.

Note: Meatloaf mixture can be found in most grocery stores. If you prefer, you can substitute ground beef.
Suggested Side:  crispy crashed potatoes
