Cucumber Salmon Bagels

Servings: 24 mini bagels          Prep Time: 15 min. + 1 hour to chill          Cook Time: 10 min.
This is a fabulous addition to any brunch.
 

INGREDIENTS

• 8 oz cream cheese
• 1 small cucumber(s), seeded and chopped
• 1 tbsp dill (fresh), chopped
• 1 tsp lemon juice (fresh)
• 12 miniature bagels, split
• 6 oz smoked salmon, thinly sliced

1. Process cream cheese, cucumber (peeled, seeded and chopped), dill, and lemon juice in a food processor. Transfer to a small bowl. Season with a little salt if needed. Chill for at least 1 hour.

2. Place split bagels on a lightly greased cookie sheet. Bake at 350 degrees for 10 minutes or until toasted.

3. Spread cucumber mixture on each bagel half and top with smoked salmon.

YUMMY! So light and the perfect spread for salmon. It would be great as a dip with veggies and other sandwiches.
