Crispy Olives Stuffed with Sausage

• 1/4 lb Italian sausage (sweet)
• 1 tsp garlic, minced
• 1/2 tsp crushed red pepper
• 1 jar olives, 8 oz.
• 4 cup(s) peanut oil
• 1/2 cup(s) flour
• 2 large egg(s), beaten lightly
• 1/2 cup(s) breadcrumbs
• 2 tsp olive oil

1. Remove sausage from casings and place in a bowl. Add garlic, red pepper flakes, and salt to taste. Mix well.

2. Drain olives and rinse in cold water.

3. Stuff each olive with 1/2 t of sausage mixture.

4. Heat oil in stock pot. While heating, place flour on a plate. Place eggs in another shallow pan and breadcrumbs on another plate. Season breadcrumbs with salt and pepper.

5. Dampen olives with olive oil. Roll in flour (shake off excess), then egg (shake off excess), then breadcrumbs.

6. Fry the olives until golden brown, about 3 minutes. Drain on paper towels and serve warm or at room temperature.

Note: Use large, pitted green olives.
