Couscous with Golden Raisins and Pine Nuts

• 2 tbsp unsalted butter
• 1/4 cup(s) red onion, chopped
• 3 cup(s) chicken broth, low sodium
• 1 1/2 cup(s) couscous
• 1/2 cup(s) pine nuts, toasted
• 1/2 cup(s) golden raisins

1. Cook chopped red onion in melted butter over medium heat for about 3 - 4 minutes. Add the chicken stock and bring to a boil.
2. Remove from heat, stir in couscous and cover. Let sit for 10 minutes. Add toasted pine nuts and raisins and fluff with a fork.

Note: Add some fresh parsley for a little color.
