Corn, Avocado and Tomato Salad

DIRECTIONS

• 2 cup(s) corn (frozen), thawed
• 1 avocado, diced
• 1 pint(s) cherry tomatoes, halved
• 1/2 red onion, finely chopped
• 2 tbsp olive oil
• 1 medium lime(s)
• 1/4 cup(s) cilantro (fresh), chopped

1. Place corn, avocado, tomatoes and red onion in a bowl.
2. In a separate bowl, whisk together olive oil, 1 tbsp fresh lime juice, 1/2 tsp lime zest, cilantro, and a pinch of salt and freshly ground black pepper.
3. Pour vinaigrette over veggies. Toss gently and serve.
