• 3 cucumber(s), peeled • 1/4 cup(s) rice vinegar • 2 tsp Krazy Jane's Mixed Up Salt, divided • 8 oz cream cheese, softened • 1/4 cup(s) mayonnaise, light • 1 tbsp chives
|  | 1. Peel cucumbers and then grate them. Squeeze out as much water as you can and place grated cukes into a bowl. Toss with rice vinegar and 1 tsp. Krazy Jane's Mixed Up Salt (see note below). Let chill for 3 hours.
2. Drain chilled cucumbers in a colander. Place on a paper towel and then place another paper towel on top, pressing down to remove more moisture.
3. Beat cream cheese, mayo, and remaining tsp Krazy Jane's salt at medium speed for 1 minute until smooth. Stir in cucumber mixture and chives. Cover and chill for 1 more hour (at least). Garnish with extra chives and serve with toasted pita chips. |
