Chunky Chocolate Bread Pudding

• 2 cup(s) Hawaiian sweet bread, cubed
• 2/3 cup(s) milk, 2%
• 2 tbsp sugar
• 1 1/2 tbsp cocoa powder
• 1 tbsp Kahlua
• 1/2 tsp vanilla
• 1 egg(s), beaten lightly
• 2 oz chocolate, semisweet, coarsely chopped
• 2 tbsp cool whip

1. Preheat oven to 350 degrees.
2. Cut bread into 1/2 inch cubes. Arrange on a baking sheet and bake for 5 minutes (or until toasted). Reduce oven temp to 325 degrees.
3. Combine milk, sugar, cocoa, kahlua, vanilla and egg. Whisk together. Add bread and toss gently. Cover and chill for at least 30 minutes (up to 4 hours).
4. Coarsely chop chocolate. Divide 1/2 of bread mixture evenly between two ramekins coated with cooking spray. Sprinkle evenly with 1/2 of chocolate. Repeat layers (remaining bread and remaining chocolate).
5. Place ramekins in a small baking pan. Add 1 inch of hot water to the pan. Bake at 325 degrees for 35 minutes or until set. Serve warm with a dollop of cool whip.

Note: Hawaiian bread is a sweet bread found in most grocery stores.
