• 14 oz cannelloni beans, unsalted, drained and rinsed • 1/3 cup(s) arugula, chopped • 1/2 lemon(s) • 2 tbsp olive oil • 1 tbsp red onion, finely chopped • 1 French bread baguette (about 2 ft.)
|  | 1. Mix the beans, arugula, juice of 1/2 lemon, olive oil and red onion. Set aside in serving bowl.
2. Slice baguette into thin rounds. Place on cookie sheet. Spray lightly with cooking spray (or brush on a little olive oil) and broil for 1 - 2 minutes.
3. Serve crostini with cannellini bean mixture.
