Beef Sate with Peanut Dipping Sauce

This is a really fun and easy supper to try. Smaller children will love the beef skewers plain but throw together the tasty peanut dipping sauce for the older kids and adults in the house.
 

INGREDIENTS

• 1 lb flank steak
• 2 tbsp hoisin sauce
• 2 tbsp coconut milk
• 1 1/2 tbsp peanut butter, creamy
• 1 tbsp soy sauce, low sodium
• 1 tsp sugar
• 1 tsp lime juice (fresh)
• 1/2 tsp red curry paste

1. Cut steak diagonally across the grain into 1/4 inch thick slices. Combine steak and hoisin sauce in a ziplock bag.

2. For the dipping sauce - Combine coconut milk, peanut butter, soy sauce, sugar, lime juice and red curry paste in a bowl. Set aside.

2. Thread steak onto 8 skewers (two pieces should fit on each skewer). Season with salt and place on a broiler pan coated with cooking spray.

3. Broil steak for 3 minutes on each side or until done. Serve with dipping sauce.

Note: Red curry paste is an unusual ingredient but it is easy to find in the ethnic food section.
Suggested Side:  Creamy Jasmine Rice - prepare it with half water and half coconut milk (you should have enough extra coconut milk).

This recipe is great. My kids love it. The peanut sauce is good, we had to tweek it a little, but it makes alot. We've had enough for at least 3 different meals. I have 4 children and they all loved the meat. I highly recommend this recipe.
