Asian Steak Rolls

Veggies are rolled inside thin slices of flank steak. The Asian marinade is reduced to a glaze and spooned over each steak roll. It's a quick cooking meal with just a few ingredients!
 

INGREDIENTS

• 1 lb flank steak
• 12 spear(s) asparagus, trimmed
• 1 red bell pepper, sliced
• 1/2 cup(s) rice vinegar
• 1/2 cup(s) soy sauce, low sodium
• 1 1/2 tbsp sesame seed oil
• 1 tbsp sugar, heaping

1. Slice flank steak across the grain into strips that are about 1/4 inch thick. Pound to 1/8 inch thick.

2. Place one asparagus spear and one red pepper slice across one end of the steak strip.

3. Roll steak around veggies and secure with a toothpick. Place in a single layer on a baking sheet. Repeat with remaining beef and veggies.

4. Combine remaining ingredients and pour over steak rolls. Let marinate for 10 minutes.

5. Preheat broiler to high. Broil steak rolls for 5 - 7 minutes. Unroll one steak roll to check doneness. Remove and keep warm.

6. Pour marinade from baking sheet to small saucepan. Boil until it reduces to a glaze, about 3 - 5 minutes. Pour over rolls before serving.

Note: Use veggies that are cheapest at the store (zucchini slices, scallions, portobello mushroom slices would all work well).
