• 1/3 cup(s) balsamic vinegar
• 1/3 cup(s) olive oil
• 1 tbsp honey
• 2 tsp Dijon mustard
• 12 oz chicken breast halves, boneless skinless
• 1 cup(s) tomato(es), diced small
• 3/4 cup(s) cucumber(s), diced small
• 1/2 cup(s) red bell pepper, diced small
• 5 oz lettuce spring mix
• 5 oz mozzarella cheese (part skim), fresh, sliced

1. For the dressing: Whisk together balsamic vinegar, olive oil, dijon mustard, and honey. (we like to season with s&p but it will increase the sodium).
2. Lightly pound chicken just to an even thickness. Add 1/2 of dressing to chicken and marinate for at least 4 hours.
3. Finely dice tomatoes, red pepper, and cucumber and add 2 T of remaining dressing.
4. Remove chicken from marinade and discard marinade. Grill chicken for 7 minutes per side over medium - high heat or until done.
5. Slice each chicken breast on an angle and place one on each plate with alternating slices of fresh mozzarella.
6. Top chicken breasts with diced veggies. Divide mixed greens among the four plates and top with a drizzle of remaining dressing.
