Quick Caesar Salad and Pepper Shrimp

DIRECTIONS

• 32 shrimp, large, peeled and deveined
• 2 tbsp olive oil
• 2 tsp lemon pepper
• 2 cup(s) croutons
• 1/2 cup(s) caesar salad dressing - light
• 6 cup(s) mixed baby greens, chopped
• 6 cup(s) hearts of romaine lettuce, chopped
• 4 tbsp parmesan cheese, grated

1. Preheat grill to medium-high. Toss shrimp on olive oil and season with lemon pepper. Thread 4 shrimp onto each skewer. Grill, turning frequently, for 8 minutes or until just done.
2. In a large bowl, toss croutons with 2 tbsp of dressing. Add both lettuces. Season with kosher salt and pepper. Toss with remaining dressing. Add remaining parmesan and toss gently.
3. Divide salad among plates and top with shrimp skewers.

Note: If using wooden skewers, soak in water for 30 minutes to prevent burning.
